Richard Olate reconnected with pastry in 2018 when he started working as Advisory Technical Chef. His main activity is to create new gelato recipes, train clients on new techniques and machinery, launch and counsel gastronomic businesses all over Chile; his mission is to improve artisanal gelato in the country by promoting local ingredients.

Moreover, he works as a teacher at Casa Optima Chile, where he holds artisanal gelato courses and is the supporting chef in courses generated by the school, like pastry and chocolate.
