 
		NZ Pastry was founded in 2017 by Nicolas Nikolakopoulos and Zissis Goudas as a pastry consulting team. Yiannis Asproulis later joined the group. The team specializes in gelato, pastry, chocolate, and R&D for products designed for special diets. They have worked in pastry shops and restaurants and have extensive experience in industrial-scale production. Together, they operate their own production and development lab, which serves as a hub for recipe creation, innovation, and professional training through specialized seminars.
Nicolas Nikolakopoulos
Award-winning Pastry Chef–Chocolatier with an artistic approach, a background in chemistry, and an international reputation. Known for his precision and concept-driven work, Nicolas ranked among the top 3 in the World Chocolate Masters 2022 and leads high-level projects in formulation, innovation, and sensory design.
Zissis Goudas
Rooted in the restaurant world and modern plated desserts, Zissis has evolved into a corporate pastry chef working with major food companies on R&D and production. He brings strong business insight, modern aesthetics, and deep flavor development expertise — bridging creativity and strategy across formats.
Yiannis Asproulis
Pastry chef and chocolatier with strong expertise in production, training, and recipe development. Yiannis combines technical precision with creativity, ensuring innovative ideas are transformed into practical, high-quality results. As a trainer and production lead, he plays a key role in turning concepts into consistent execution, while contributing to the team’s R&D projects and seminars.
